QUICK VEGETARIAN

Courgette fritti

Broad bean spaghetti with Pecorino

Roast figs with mascarpone

Fritti are good to serve with a drink while you’re cooking the pasta, and the roast figs take no time and can keep warm in the oven. Even if people aren’t vegetarian, they often don’t notice if there’s no meat.

A SUMMER PICNIC

Roast aubergine, tomatoes and fregola

Lamb kefte with herb salad and spicy yogurt

Apricot and rosemary galette

Two of these dishes can be eaten in the hands – I provide proper napkins and glasses, and all you need are forks and plates for the salad. Melamine or enamel are excellent lightweight picnic plates. These things still taste good even after a journey in a basket – the salad will have infused its flavours and the lamb, wrapped in foil, will keep warm. Even better, if I’m lighting an outdoor fire, I cook the lamb on that.
